We don't add coffees often. When we do, something about the lot has to earn it. This one came through Showroom Coffee.
Mullugeta Muntasha grew up in Bursa, a village where coffee only recently took hold. He started out driving trucks in Arsi, hauling cherry to private washing stations, then moved into collecting and supplying the central market. In 2021 he went back home and opened his own drying station, Dawencho. That same year he placed 2nd at Cup of Excellence. In 2022, four of the top ten CoE winners ran through Dawencho, including 1st place from his brother-in-law Legesse Botola. The station now serves his farm and the growers around him.

Why we rest our coffee
We roast on a Loring S15, and one thing we've learned is that our coffees need time. At least 2 weeks off roast, sometimes 3+ before everything really comes together.
It's not just us - we've had the same feedback from customers brewing at home. The sweetness, the clarity, it all shows up later than you'd expect.
So if you get a bag and the roast date is recent, give it some time. It's worth the wait.
