Maritza and Joel Manchay farm coffee with their three kids at El Yarirague in Cajamarca. They grow Caturra and Gesha varieties the traditional way—under plantain and yuca trees, with beans planted between the coffee plants to keep the soil healthy. It's shade-grown coffee the way it's been done for generations, producing beans with the kind of flavor you can only get from this approach.
